Meet Malissa. She’s 22 years old, an Aquarius and is basically the human form of a green smoothie: super healthy and makes you feel good! The nutritional and dietetic medicine student sat down with us to talk winter warmers, body confidence and personal style.

Summers over, sniff. What are the three best things for you about winter? 
Hearty winter soups, layering my favorite winter styles and staying in to watch movies or read a good book! 

How did you discover your love for healthy eating and cooking?
My parents owned a fruit and veg shop so I was lucky enough to always be surrounded by fresh produce. I come from a big Italian family and I have always admired how well my grandparents can cook. Food brings joy, togetherness and laughter!

If you were a smoothie what ingredient would you be?
Definitely berries! I would go perfectly with banana, dates, rice milk, coconut yoghurt and ice. 

What’s your feel good outfit?
A pair of my favorite skinny jeans, a cute top and heels. This outfit never fails and you can dress it up or down for any occasion, so it’s perfect!

Your insta is all about being body confident. How did you find that confidence within yourself? 
It took me a very long time to gain such confidence in my own body and it’s something I still work on every day. A turning point for me was when I began to acknowledge the feelings I would get when I would look in the mirror. I didn’t love what was looking back at me. I was constantly comparing myself to others and putting myself down. I simply felt like I wasn’t good enough and was striving for this so called “perfect body”. I guess one day I just realized what a sad way this was to live my life. It’s so important to embrace our individuality and our beautiful bodies, which work tirelessly to keep us alive. I made a promise that I would learn to love my body and take better care of myself through exercise, healthy eating and a positive mind.

What advice do you have for girls who might be struggling with their own body confidence issues? 
One thing I always remind myself (on a daily basis actually) is: There are over 7 billion people in this world and not any 2 people are the same. You are unique, so stop comparing yourself to others, because no one will ever have what you have. And that is something very special. If we all had this so called “perfect body” then what would be so special about that? Nothing at all. Your body is perfect just as it is, right now!

 Seems to us you’re super fit! What does your week in workouts look like?
I like to keep my workout routine different each week.  My week in workouts involves Yoga 3 times a week, HIIT (High intensity interval training) twice a week and I basically ride my bike everywhere so that’s my cardio!

What music do you blast while working out? 
Queen Bey, of course! I have her greatest hits album on repeat all the time.  

When you’re treating yourself what’s your go-to?
ICE-CREAM! I generally go for strawberry (with sprinkles) or something like salted caramel.  YUM!

You’re working on a cookbook! How did that come about? And what can we expect from it?
Yes! It has been a very exciting journey for me putting together my first ever cook book called “Healthy Indulgence”. It all came about when I started posting pictures of the food I was eating on social media. I was getting a lot of people asking for my recipes so I thought “why not put a book together?!” It includes breakfast, light meals, dinners and a whole heap of sweets and treats recipes. I have also incorporated affirmations throughout the book to help the readers build a loving and positive relationship with their body, mind and food. I want my readers to embrace my cook book just as I have and enjoy the journey that will lead them to a happier and healthier lifestyle. 


Malissa’s ‘Creamy Coconut & Super Greens Soup’

GF | Vegan | Prep 15m | Cook 25m | Serves 4

INGREDIENTS 
1 Tablespoon Coconut Oil
1 Brown Onion, chopped
2 Garlic Cloves, crushed
2 Fennel Bulbs, trimmed and chopped
1L Vegetable stock 
3 Broccoli heads, chopped
2 Zucchini, roughly chopped
½ Bunch Parsley, chopped
1x 400ml can Coconut Cream
Salt & pepper

METHOD
 
1. Melt the coconut oil in a large pot. Lightly sauté the onion, garlic and fennel, once lightly cooked add the vegetable stock and bring to the boil.
2. Add the broccoli, zucchini and parsley in to the pot and cook for approximately 15 - 20 minutes until soft.
3.  Pour in the coconut cream and stir through. Season with salt and pepper
4. Using a stick blender blend ingredients until smooth. Serve warm.
